Freezer Space

Plan for about 28 pounds of meat per cubic foot. A 14 cu. ft. freezer works well for a half cow and keeps meat fresh for over a year.

What does hanging weight mean?

The hanging weight is the weight after the blood, hide and inedible parts are removed. The hanging weight is 59%-62% of the live weight.

What is cut weight?

Cut weight is the final weight after aging, usually 7–10 days. It’s about 30% less than hanging weight due to moisture loss and trimming.
